Introduction
Wonderful dip for homemade pita chips or sweet potato chips and cut up veggies. I like bell peppers, carrots, cucumbers and celery. Very easy and healthy. Ingredients

4 cups chopped fresh spinach, loosely packed
12 ounces plain Greek yogurt
1/4 cup chopped green onions (can use yellow onion)
3 cloves garlic, minced
1 cup shredded part-skim Mozzarella cheese
1/4 tsp. salt
1/4 tsp. black pepper
1/4 cup grated Parmesan cheese
Directions
Preheat oven to 350 degrees.
2Stir together first seven ingredients in a large bowl in a large bowl until evenly mixed. Transfer mixture to a small baking dish, and use a spoon to spread so that is is flat on top.
3Bake for 30 minutes, or until the cheese is melted and bubbly and the edges are slightly golden. Remove and immediately sprinkle with Parmesan cheese.
Serving Size: 10 generous servings
