    1 oz sour cream
    1 large egg
    1 tsp vanilla
    4 tbs powdered erythritol


Mix cream cheese, sour cream, and egg till fluffy in a microwave safe mug. Add vanilla and erythritol, mix well.

Microwave up to 90 seconds.

    I microwaved for a full 90 seconds and it came out cheescake-like won the top but very runny below the top layer. I will not make this again.

  • I looked up erythritol and it is artificial sweetener. I'd use Splenda - 9/1/13

    It is not an artificial sweetener, but splenda is. Erythritol comes from fruits and vegetables. To each his own.

  • I love cheesecake and this is a wonderful way to make a single serving. But what is erythritol and what could I use to substitute for it? I have never heard of it before. - 8/30/13

    Well, I didn't actually make this (yet), but I don't see how it could turn out bad!

    We are doing high fat, moderate protein, and vlc. This is a great breakfast or snack. I hope you have tried this.
