Ingredients

    Artichokes, frozen and thawed, 1 package (9 oz)
    *Potato, raw, 1 medium peeled and chopped (2-1/4" to 3-1/4" dia.)
    Swanson Chicken Broth 99% Fat Free, 4 cups
    Carrots, raw, chopped - 3 medium
    Spinach chopped, fresh, 1 package (10 oz)
    *Vidalia onion, raw 1 medium onion, chopped
    Thyme, fresh chopped, 3 tsp
    *Onion powder, 1 tbsp
    Salt, 2 tsp
    Pepper, black, 1 tsp
    *Chicken boullion cube - 2 cubes
    *Lemon Juice, 1/2 lemon
    Nutmeg, ground, .25 tsp
    *Extra Virgin Olive Oil, 1 tbsp
    Garlic, 1 clove minced
    Fresh Chives, 6 tbsp chopped for garnish

Directions

Sautee onion, garlic, carrots, salt, pepper, onion powder, and potatoes in olive oil until softened.

Add artichokes and herbs and saute another 2-3 mins then add boullion cubes, chopped fresh spinach, and chicken broth. Cook about 30 mins or until all veggies are cooked and softened.

Puree using an immersion blender or in batches using a blender. When all is smooth and combined, turn heat to medium low and add lemon and nutmeg. More salt and pepper to taste. Bring to just a simmer and serve with a sprinkle of chopped chives on top.
