Ingredients

    1 3.1-oz packet of buckwheat soba noodles
    8 oz of firm or extra-firm tofu
    4 cups of water
    1 vegetable bouillon cube
    2 Tbsp of fresh ginger
    1 tsp of miso
    2 tsp of Thai chili sauce
    2 Tbsp of Bragg's Liquid Aminos
    4 stalks of green onions
    1 Tbsp of dried basil
    1 Tbsp of dried cilantro

Tips

I cut the portions of chili sauce by over half (HH calls for 2 to 3 Tbsps of sauce) and I eliminated the red pepper flakes. These can be added by in if you prefer a spicier soup.


Directions

Chop green onions: white and light green parts minced, dark green parts sliced. Keep separate.
Cube tofu into 1/2" cubes. Break noodles into spoon size sections.

Add water, bouillon cube, lighter minced portions of green onions, and ginger to large pot and bring to a boil. Add noodles and cook for package time, about 5 minutes. Remove from heat, and add remaining ingredients.

Taste and add more ginger or Bragg's as needed.
