Ingredients

1 cup chopped cauliflower
1 cup red lentils
1 large onion, chopped
1.5 tbsp olive oil
2 tbsp curry paste
1 tbsp curry powder
1 tsp ground tumeric
1 tsp ground cumin
1 tsp chili powder
1 tsp salt
1 tsp white sugar
1.5 tsp garlic
1 can of Thrifty Maid Tomato Sauce or Tomato Puree
Directions
Wash lentils and chopped cauliflower well and place in pot with water to boil.
While this cooks, in a pan covered with olive oil sautee onions. Then, while the onions caramelize, mix the rest of the ingredients (minus the tomato sauce!) in a small bowl or cup. Once the onions caramelize, add the mix to it, stir it in well and let it cook together for about 2 minutes.
After the curry "sauce" and onions cook for 2 minutes, add the can of tomato sauce to it and place it on a low simmer until the lentil and cauliflower is ready. Once the boiled vegetables are tender, drain out as much water as possible and add them to the pan with the onions, curry sauce and tomato sauce. Mix it in well, let them cook together for 2 minutes and then serve.
