Introduction

Ingredients

    7 links turkey breakfast sausage, cases removed and crumbled
    3 large fresh eggs
    3 cups fresh spinach
    2 medium scallions, thinly sliced
    1/2 cup nonfat milk
    1/3 cup crumbled feta cheese
    1 ounce raw pecans, finely ground
    2 tsps dried dill (or 1/4 cup fresh)
    2 tsps dried parsley (or 1/3 cup fresh)
    1 tsp baking powder

    pepper to taste

Directions

Preheat oven to 400º

Remove casings from the sausage and crumble into a frying pan over medium high heat. Brown, about 5-6 minutes and remove from heat.

While the sausage is browning, whisk together the eggs, milk, dill, parsley, baking powder, and finely ground pecans.

Spray a small Le Creuset baking dish (or pie dish) with cooking spray (or with 1 tsp olive oil from a Misto sprayer). Evenly layer fresh spinach, sliced scallion, turkey sausage, and feta in the dish, then pour the egg mixture over the layers.

Bake in the oven for 30-35 minutes. Let cool for 5-10 minutes before slicing into 6 squares or wedges and serve with salad or vegetables.
