Ingredients

    1 lb. pork loin, cut into 1 " cubes
    1 large or 2 medium sweet potatoes, cut into 1/2 " cubes
    2 scallions, chopped
    1 clove garlic, minced or pressed
    1 15-oz can diced tomatoes with green chiles
    1/2 to 1 tsp ground cumin
    1/4 tsp ground black pepper
    1/2 Tbl salt
    1/4 cup orange juice, fresh is best
    2 Tbl lime juice, to be added 5 minutes before end
    2 Tbl minced fresh cilantro, added 5 min before end


Tips

Serve with a cabbage slaw or lettuce salad. Plain rice on the side is nice. Nutrtional Information is for slow-cooker recipe only.


Directions

Put pork and sweet potatoes into crock pot. sprinkle with chopped scallions. Mix garlic, tomatoes and spices right in the can. Pour over pork and sweet potatoes. Pour orange juice over top. cook for 7 hour on low or 4 hours on high setting. (If at high altitude, maybe longer) Remove lid, add lime juice and cilantro. cook 5 more minutes.
