Ingredients

    2.5 cups Bean Sprouts, cut up
    1 cup packed spinach, cup up
    ½ cup chopped bamboo shoots, diced
    ½ cup chopped water chestnuts, diced
    1tsp coconut oil for sauteing
    3 oz chuck tender steak, cooked and diced
    1tsp sesame oil
    4 Green Onions, diced
    1 Tablespoon Soy Sauce
    6 Eggs, beaten
    salt/pepper to taste

Directions

Preheat oven to 350 and spray mini muffin tin with non stick cooking spray. Saute all ingredients until just wilted and tender. Set aside to cool. Add eggs into medium sized bowl and beat. Once vegetable & meat mixture is cool, mix all ingredients together. Bake for 25-30 minutes. Let them cool a few moments and they should pull away from the sides of the tin and pop right out. Makes 36.
