Ingredients

    Beans, red kidney,3/4 cup dry
    Chicken Broth,2 1/2 cup
    Peppers, sweet, red, fresh, 1/2 cup, chopped
    Onions, raw, 1/4 cup, chopped
    Jalapeno Peppers, .13 pepper
    White Rice, long grain, cooked, 1 cup
    Canola Oil, 1 tbsp
    Bacon, 3 medium slices, cooked and chopped
    Pepper, red or cayenne, 1/8 tsp.
    Salt, 1 dash
    Pepper, black, 1 dash

Tips

Rapid soak method goes as follows: Place washed beans in a pan of water covering up to 2 to 3 inches above the beans. Place on stove and turn on high. As soon as they start to look like their going to boil then remove from the heat and cover and let set for one hour. Then their ready to finish cooking in the broth.


Directions

soak beans either over night, or rapid soak method. Pour soaking water off beans and add the chicken broth to the beans and cook on simmer until the beans are tender. While the beans are cooking saute the veggies in a pan with the oil un til tender, add these to the beans as well as the spices. When beans are done add the rice and bacon and stirr in to mix. this is aprox 3 one cup servings.
