Ingredients

6 egg whites
1 egg (yolk included)
1/2 cup spinach chopped
1/4 medium yellow onion finely chopped
~2oz goat cheese (crumbled)
add pepper and garlic powder to taste
(I don't use salt, but feel free!)

Directions
Preheat oven to 350
Beat eggs whites and egg together
Toss in chopped spinach, onion, goat cheese, pepper and garlic powder
Spray a 6-muffin pan with Pam
Spoon in egg mixture
Cook for 15-20 minutes or until cooked in the middle
Serving Size: makes 6 muffin sized servings
