This is a great grab and go food for those mornings where rushing is inevitable. Prepare the day before, heat up, and out the door you go! No need to skip breakfast. Ingredients

    6 egg whites
    1 egg (yolk included)
    1/2 cup spinach chopped
    1/4 medium yellow onion finely chopped
    ~2oz goat cheese (crumbled)
    add pepper and garlic powder to taste
    (I don't use salt, but feel free!)


Tips

This recipe can be altered so many ways, you're bound to find the one that's perfect for you.


Directions

Preheat oven to 350
Beat eggs whites and egg together
Toss in chopped spinach, onion, goat cheese, pepper and garlic powder
Spray a 6-muffin pan with Pam
Spoon in egg mixture
Cook for 15-20 minutes or until cooked in the middle

Serving Size: makes 6 muffin sized servings
