Ingredients

    2 large eggs
    1 large banana
    1/2 C quick oats
    coconut oil for frying

Tips

May add walnuts, ground flaxseed, cinnamon as extras. serve with a scoop of fat free vanilla greek yogurt


Directions

mash large banana in bowl, add 2 eggs and beat.
Add 1/2 C oats and mix to create a batter.

use 1/4 cup for each pancake, fry on hot griddle in coconut oil, flip over when brown on bottom.
