Introduction

I love both spinach and garbanzos - this is a super yummy *easy* recipe that can be served as a side-dish or used as a vegan main course.
If you want to reduce the calories you can use something other than the T of olive oil to saute in, but I think it's "worth it" as it really brings out the flavor of the garlic and the spinach.

Number of Servings: 4

Ingredients

    1 T Olive Oil
    4 Garlic Cloves - minced
    1/2 Medium Onion - diced
    1 Large Bunch Fresh Spinach
    1.5 Cups Of Canned Garbanzo Beans - drained and rinsed
    1/2 t Cumin
    1/2 t salt

Directions

Saute the garlic and onion in the olive oil until translucent.
Stir in the garbanzo beans. I like to mash some of them with the back of my spatula - gives the dish a nice texture.
Season with the cumin and salt.
When the garbanzos seem heated through, start dropping in the fresh spinach, cook till fairly wilted (see picture).
Serve *immediately*.

Serving Size: Divide finished recipe by four
