Ingredients

    1/2 C. Rice flour, brown
    3/4 C Granulated Sugar
    3/4 t Baking Powder
    1/8 t Salt
    1 T Cinnamon, ground
    1/2 t cloves, ground
    1/2 t Ginger, ground
    1/2 t nutmeg
    1/2 c Egg substitute
    1 c Evaporated nonfat (skim milk)
    2 c Sweet potato (or pumpkin)cooked mashed without skin
    2 t Vanilla flavoring
    2 1/2 T Butter, salted

Directions

Mix dry ingredients. Mash sweet potatoes with butter, milk, vanilla; add egg beaters when cool. Add sweet potato mixture to dry ingredients. Pour into buttered 9 inch pie pan. Bake at 350 for 50 min.
