Ingredients

    2 cups basmati rice
    1 15 oz. can garbanzo beans
    1 15 oz. can diced tomatoes
    1/2 onion chopped

Tips

I've made this with curry, and also with basil and oregano.


Directions

cook rice according to package directions.

In skillet cook onions in 2 tsp. vegetable oil. Add tomatoes and simmer about 15 minutes.

Add cooked rice.
