Introduction

Easy, delicious, and filling little pancakes! We also make them a little larger and put filling in them like peanut butter, a little jelly, fruit, or whatever else you like! Ingredients

    6 eggs
    1 1/2 cups of cottage cheese (I use 4%)
    1/2 tsp salt
    1/2 cup of flour
    1/4 tsp baking soda

Tips

Put in a tortilla warmer to keep warm and pliable if you want to roll them. Can substitute ricotta, if you'd like. You can also use a hand blender.


Directions

Put it all in a blender and blend until smooth. Cook on a griddle @ 350 until bubbles appear on top (about 1 minute) flip and cook about another minute.
