Introduction

It is just a basic banana muffin which has zero calories. It is just a basic banana muffin which has zero calories.
Number of Servings: 12

Ingredients

    4 bananas
    1cup sugar
    2 cup bran cereal (Kellogs/Natures Path)
    1 large egg
    0.25 tsp baking soda
    half tsp baking powder
    0.25 tsp salt
    0.25 tsp ground nutmeg
    1.25 cup flour
    1 cup buttermilk
    0.25 cup flaxseed
    0.25 cup canola oil

Directions

1. Place cereal, buttermilk, and flaxseed (ground) in a bowl of food processor, and pulse to combine. Let it stand for 30 min. Or until cereal is soft. Preheat oven to 350 degrees. Coat 12 cup muffin pan with cooking spray.
2. Add 3 bananas to cereal mixture, and process until smooth. Add sugar, egg, and oil, and process until smooth.
3. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl. Add cereal mixture in food processor, and pulse until smooth.
4. Fill each muffin cup with half cup batter slice remaining banana in half-inch-thick rounds and place on tops of muffins. Bake 20 to 25 min, or until muffins on top are browned and tooth pick inserted in center comes out clean. Cool on wire racks.

    Not only was this muffin incredibly tasteless, the description states ZERO calories and it contains well over 200 for EACH muffin!!!! (I knew it didn't have zero, but why even write that??) The only thing ZERO about this recipe is the rating is should have. Lucky for you, I have to give it 1star.
