Ingredients

3 5-oz can Tuna fish Rinsed and drained
2 large (3" dia) Tomatoes
1/2 med (2.5" dia) Onions
5 cloves Garlic
1-3 Tbsp capers Rinsed and drained
3 oz Olives, green Pitted, sliced
4 pc Pepperoncini Rinsed, drained, and sliced
1 lrg (3"- 4-1/4" dia) Potatoes, white cubed
2 Tbsp Olive oil
Tips
3 cans of tuna fish, after draining weights about 9.3 oz.
1.5 cups of drained tuna fish weights about 8.62 oz.
1/2 cup of green olives weights about 90 grs = 3 oz
Directions
Blend tomatoes with onions and garlic.
Heat the oil over medium-high heat in a large pot.
Pour in the tomato blend. Bring to a boil.
Add the rest of the ingredients but the fish and potatoes.
Reduce heat medium and simmer until the sauce changes color, about 15 minutes.
Add the fish and potatoes.
The casserole will be ready when the potatoes are cooked, about 30 minutes.
Serving Size: Makes 4 servings
