Introduction

stir fried chicken, tofu and pineapple with chick peas stir fried chicken, tofu and pineapple with chick peas

Ingredients

    2 cups fresh diced pineapple
    1 lb chicken breast (i used thin sliced sliced breasts)
    1 block of extra firm tofu, cut into 1 in or 3/4 in cubes
    drained can of chick peas

    wheat flour
    ras el hanout
    curry powder

Tips

cook tofu with the pineapple for more flavor, or soak tofu in pineapple juice for varying amounts of time until you get the amount of flavor you like.


Directions

cook chicken in grill pan with ras el hanout and curry powder

mix wheat flour, ras el hanout and curry powder
lightly roll tofu cubes in mix, lightly brown on each side with pineapple in the pan (just to let the tofu grab some flavor from the pineapple)

put chicken in wok, add the pineapple back to pan, add chick peas, stir and heat.
add tofu last, put a lid on for the flavors to marry for about 10 minutes

this was all highly experimental and I'll be playing with it some more
