6 chicken thighs, 1 lb carrots, 2 cups celery, 2 cups onion, 6 chicken bouillon cube, 1 bag of frozen mixed veggies, 1 cup brown rice
Directions
place raw chicken thighs in water in large pot. (be sure to use enough water to leave enough room for the other ingredients but not too much as you will dillute flavor. when the chicken is cooked add the bouillon cube, vegetables and bring to a boil. add rice, reduce heat and simmer. i set this to about 12 servings but depending on how much you eat, maybe 6.
