Introduction

These are delicious muffins with applesauce instead of butter. Loaded in fibre and taste. Makes a huge batch but they freeze very well. These are delicious muffins with applesauce instead of butter. Loaded in fibre and taste. Makes a huge batch but they freeze very well.

Ingredients

    SWEET WATER BRAN MUFFINS

    3 c w.w. flour
    1 ˝ c bran
    1 ˝ tbsp baking powder
    ˝ tbsp baking soda
    2 tbsp flax seed
    1 cup walnuts

    1 cup applesauce
    1 ˝ c brown sugar
    3 eggs
    1 ˝ c buttermilk (or milk with 1 tsp lemon juice)
    4 cups fruit (this recipe is 2 cups mashed banana and 2 cups diced apple)

Tips

you can use any fruit you like


Directions

Add wet to dry. Stir until moistened. Fill very full. Baste tops with honey (optional).
Bake 325F 30 min.
Yield 16 very large muffins or 62 mini muffins
