Ingredients

    1.5 cups unsweetened shredded coconut meat
    .5 cup carob powder
    1 tbsp liquid stevia concentrate
    1/2 cup + 3 tbsp moistening agent (water, milk, pureed banana, egg, egg white, apple sauce, or apple fiber)
    1/4 cup coconut oil, melted on low heat

Directions

1. Combine the coconut and carob in a medium mixing bowl.

2. Heat the coconut oil and stevia over low heat until melted. Do not over heat.

3. Add the oil mixture to the coconut and stir well until combined.

4. Form into walnut sized balls. You may need to squeeze the balls with your hands to make them stick together. If mixture is wet and hard to handle, simply use a spoon and place spoonfuls of mixture onto a plate or pan.

5. Place balls on a pan or a plate and place in the fridge. They will harden within 20-30 minutes, but you can put them in the freezer to harden more quickly. If you choose to keep them in the freezer, let them sit out at room temperature for 5-10 minutes before eating.

Serving Size: Makes 9 balls
