Introduction

My husband was asking for deviled eggs with a little "zip"; we both love Tex-Mex food, so I created something with a Southwest flavor. He says I came up with a winner! Ingredients

    6 large hard-boiled eggs
    1 Tbsp Hellman's Olive Oil Mayonnaise
    1 Tbsp onion, finely chopped
    1 Tbsp pickled jalapeno juice
    1 tsp pickled jalapeno, finely chopped
    1 tsp ground cumin
    Juice of 1/2 fresh lime
    Smoked paprika, for sprinkling

Directions

Slice eggs in half lengthwise; scoop yolks into a small bowls. Mash yolks with a fork, then add in remaining ingredients except paprika and mix well. Spoon yolk mixture into egg halves using a spoon, plastic bag with a corner snipped off, or a small muffin scoop. Sprinkle with paprika. Cover and keep refrigerated until ready to serve.
