Ingredients

For the ribs:
3 T. olive oil
3 t. minced garlic
1 T. chili powder
1/2 T. cinnamon
24 oz. boneless pork ribs
For the salsa:
2 apples, chopped
1/2 c. red bell pepper, chopped
1/4 c. shallots, chopped
1/3 c. lime juice
1 T. honey
1 T. dried cilantro
1/4 t. pink himalayan salt
1/4 t. ground black pepper
Directions
Mix olive oil, chili powder, cinnamon, and garlic in shallow dish, and add pork. Toss to coat well. Refrigerate for 30 minutes to marinate.
Preheat oven at 400F. Lightly spray a baking dish with Pam.
While pork is marinating, prepare apple salsa. Chop apples, red bell pepper, and shallots. Toss in a bowl with lime juice, cilantro, honey, salt, and pepper. Seal off with a lid and refrigerate till ready to use.
After marinated, put pork in baking dish and bake for 30 minutes.
Once cooked through, serve on a plate and top with apple salsa.
Serving Size: makes 8 3 oz. portions of pork topped with salsa
