Ingredients

2 medium sweet potatoes, cleaned
2 oz cream cheese
1 Tbsp unsalted butter
2 Tbsp fat free sour cream
1 tsp salt
3 tsp brown sugar
1 tsp cinnamon
Tips
Mashing the filling to almost a whipped consistency makes the most heavenly twice baked potato.
Directions
Cook the sweet potatoes until tender throughout (microwave or oven). Allow to cool so that you can handle them.
Remove a wedge of skin from the top of the potato (you are not cutting them in half, just taking a thin slice off of one long side to create a boat).
Scoop out the soft sweet potato, leaving just enough so that the potato skin maintains its shape. Mash the sweet potato with the cream cheese, butter, sour cream and salt. Spoon the mashed sweet potatoes back into the two sweet potato shells.
Top each sweet potato with a sprinkle of brown sugar and cinnamon, then cook at 425 degrees for about 15 minutes, or until heated through.
