A delicious and nutritious dinner for one. I cook my rice in a rice cooker before starting dinner. I really enjoy this when I'm looking to put a bunch of nutrients into my body. Ingredients

    1 cup Jasmine Brown Rice (cooked)
    1/3 cup Red Pepper (diced)
    1/3 cup Broccoli (small pieces)
    1/2 cup Red Onion (diced)
    1 clove of Garlic (minced)
    1/4 cup Kale (ripped into small pieces)
    1/4 cup baby spinach
    salt and pepper to taste
    1 T olive oil
    1/2 t soy sauce
    I 3oz thin sliced chicken breast

Directions

I like to cook my rice a head of time in a rice cooker. I add 1/2 of the oil to a preheated pan and pepper chicken and place in center of skillet. I let cook till I see brown crust at thinnest edge of chicken breast. Flip Chicken, add the remainder of oil and veggies. saute until greens are wilted and onions are golden. Add splash of soy sauce cook one more minute and remove from heat. I put chicken and veggies over rice and enjoy.

Serving Size: Makes dinner for one (full place)
