Ingredients

4 Tbsp olive oil
2-4 oz onions, sliced
1 tsp salt
2 oz fresh ginger, coarse chopped (2 ice cubes)
2 oz garlic, coarse chopped (2 ice cubes)
7 cups water
1 can (8 oz) tomatoes
1 tsp tomato paste
1 tsp turmeric
1 tsp paprika
Directions
Heat 3 Tbsp oil in large saucepan, add onions, stir on high for 1 minute and turn down to medium high - cook and stir for 10 mins until onion is transparent and beginning to brown. Add salt to prevent browning, stir, turn heat down to lowish - cover and cook for 20 minutes (stir occasionally). Add ginger and garlic, turn up heat to med low and cook for 2 mins until aromatic. Add spices, tomato paste, canned tomatoes, simmer 10 mins. Add water (7 c), bring to boil, turn down and simmer covered for 25 mins. Use stick blender until smooth.
