Ingredients

1 box frozen spinach, 10oz, thawed
1 med onion
5 cloves of garlic, minced
2 tsp ginger, grated or paste
1 tsp berbere spice
2 tsp ghee or coconut oil
2-4 jalapeno peppers, seeded, to taste
salt and pepper to taste
Tips
You can also try this with blanched kale, collard, or other greens.
Directions
Thaw spinach and drain well, squeezing out some of the water.
Peel and finely-chop onion. Mash or mince garlic if not using jarred garlic. Peel and grate ginger if not using ginger paste. Cut open jalapenos and remove seeds, then mince.
Add ghee (or coconut oil for vegetarian/vegan version) and cook onions over medium heat until lightly browned, about 10 minutes, stirring frequently.
Add spices and jalapenos and cook for a couple of more minutes while stirring to incorporate.
Add the spinach and cook until heated through thoroughly.
Serving Size: Makes 4 generous servings
