Ingredients

1.5 c honey
.5 canola oil
1 c. water
12 c. oatmeal
1 c. wheat bran
1 c. oat bran
.5 c sunflower seeds, unsalted
.5 c pumpkin seeds, unsalted
1 c. raisins, not packed
4 oz. Trader Joe's candied ginger, finely chopped
cinnamon and ground ginger to taste
Directions
Warm the honey, canola oil and water in a crockpot on high for 30 minutes.
Add 12 cups of oatmeal and stir well. Cook on high, covered for 1.5 hours, stirring every half hour. Keep an eye on it in case you have hot spots in your crockpot.
Turn your crockpot to low, uncover it and cook for another hour, stirring every so often. (At least twice) This produces a kind of soft granola that my family prefers.
Once cool, move the cooked oats to a very large bowl and combine with the remainder of the ingredients. Store in a tightly covered container. Note: this lasts less than a week in my family so if if you will store it longer, you may wish to store in the refrigerator or freezer.
