Introduction
This was really quick and easy to make, and tastes really good. I served it over Moroccan Spicy Quinoa, but would go well with rice or couscous. Ingredients

400g (1/2 /b) chicken breast, cubed
2 tsp paprika
1 tsp cumin
1 tsp ginger
1 tsp turmeric
1 tsp cinnamon
1/2 tsp black pepper
1 onion, thinly sliced
3 cloves garlic, minced
1 cup lentils (any type, but red looks a little better...)
2 cups diced carrots
1/2 cup raisins
1 cup green olives
3 cups chicken or vegetable broth
1/4 cup lemon juice
1 tsp dried coriander (or a handful of chopped fresh)
1 tsp dried parsley (or a handful of chopped fresh)
Tips
Can use chickpeas instead of lentils, but may need to alter the amount of water.
Directions
Coat chicken in mixed dry spices and let sit overnight (or at least 30 mins). Place all ingredients (except coriander and parsley) in slow cooker and cook on low for 6-8 hours. Stir in coriander and parsley 15-30 minutes before serving.
