Introduction

Number of Servings: 4

Ingredients

    1 lb chicken, skin removed, cut into bite-sized pieces
    2 Tbsp oil
    6 dry red chiles
    2 cloves garlic, minced
    1/2 onion, diced
    1/2 c cashews
    2 Tbsp fish sauce
    2 tsp soy sauce
    1/2 tsp sugar

Directions

Heat oil in pan. Saute red chiles for a minute, until slightly darker but not blackened. Remove with slotted spoon.
Add chicken to hot oil, sauté for a couple of minutes. Add onion, sauté for another couple of minutes. Add fish sauce, soy sauce and sugar, stir to mix. Finally, add cashews & chiles. Heat for a minute, then serve.

    This is delicious. I added chopped zucchini, chopped onions, and chopped carrots to bulk it up. 8-) - 9/19/17
