Introduction

A great way to get your veggies. You can add a lean protein or flavored chicken sausage if you like. My favorite is Amy Lu's chipolte pepper chicken sausage. Great w/ a few dashes of hot sauce! Ingredients

    1.5 C chopped carrots
    1.5 C chopped cabbage
    1.5 C onion
    2 minced garlic cloves
    3 meduim shallots - chopped fine
    1 can pinto beans
    1 can diced tomatoes
    V8 Juice (I like the hot and spicy)
    8 cups chicken broth
    1/2 T olive oil
    cooking spray


Directions

Spray stock pot w/ cooking spray and sautee onion, garlic and shallots in olive oil until translucent Add carrots and cabbage and sautee for about 6 min. over medium heat. Add rest of ingredients and simmer, uncovered for at least 45 min.

Serving Size: Makes about 12 1-cup servings
