Introduction

This is hands down the best crock pot recipe I have ever had. My boyfriend requests it constantly. It is easy to do and tastes like an expensive meal! Ingredients

    3 - 4 Boneless Chicken Breasts (depending on size, and I trim the fat)
    4 Tbsp. EVOO
    6 Tablespoons Dry White Wine
    1/2 Tsp. Salt
    1/2 Tsp. Pepper
    4 Garlic Cloves, minced
    1 Tsp. Dried Basil
    1/2 Tsp. Dried Parsley
    1/4 Cup Finely Grated Parmesan Cheese + 2 Tbsp for later (I use reduced fat)
    1 Cup Uncooked Whole Wheat Orzo
    1 Cup broccoli (I buy steamer bag frozen)

Tips

- The type of wine you choose may alter the flavor a little but not noticeably. You can use the non-alcoholic cooking white wine.
- I usually go heavy handed on the broccoli so it stretches the carbs.


Directions

The night before, season chicken breasts with salt and pepper. Whisk together 3 tablespoons EVOO, 1/4 cup cheese, basil, parsley, garlic, and 3 Tbsp. white wine in a bowl. Place chicken in large ziplock bag, pour marinade over top and coat chicken. Keep in fridge overnight.

The next morning, put chicken in crockpot with 3 tablespoons white wine. Cook on low for 6-8 hours.

Prepare 1 cup of whole wheat orzo according to directions. Once cooked, drain and combine with remaining olive oil, 2 tablespoons of parm, and salt and pepper if desired. Cut chicken into pieces and toss with orzo. Add in broccoli and top with additional parm if wanted. Enjoy!

Ps - this stores very well for lunch the next day!
