Ingredients

1 batch pirogi dough
36 prunes
1 cup sherry
Water for boiling (if cooking them immediately.)
Tips
You can substitute wine, brandy or port for the sherry.
Directions
1) Soak the prunes in about 1 cup sherry. (The longer the better.)
2) Prepare the pirogi dough, and divide into 36 portions.
3) Roll out the dough into a round, and place a soaked prune in the center of each piece of dough. Fold the dough around the prune, and pinch the edges carefully, to seal in the prune.
4) Place the pirogi on a greased tray, and set aside. Repeat with the rest of the dough.
The pirogi can be frozen on the tray and then bagged for storage, or they can be boiled immediately. Boil fresh pirogi for 5 minutes. If cooking from frozen, boil for 7 minutes.
