Introduction

This recipe originally calls for Chilean Sea Bass which is AWESOME in this braise...unfortunatelly sean bass is EXTREMELY expensive so this is my thrift store version which is still quite yummy! Ingredients

    boneless, skinless chicken breast, 24 oz (1 1/2 lbs)
    *Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 14.5 oz (one can)
    Chicken Broth, 0.5 cup (4 fl oz)
    Onions, raw, 1 medium, diced
    Garlic, 3 cloves diced
    Green Olives, 40 gram, about 10 olives diced

Tips

cooking times may vary so just be sure your chicken is thoroughly cooked through.


Directions

Cut chicken into 8 portions
Saute onion and garlic about 5 minutes
Add tomatoes, broth and olives and bring to boil
Press chicken into mixture and cover
Lower temperature to medium to meduim low
Let chicken braise 10-15 minutes then flip and repeat
Serve chicken with about 1/2 cup of braise on top

Serving Size: Makes 8, 4 oz servings of chicken plus about 1/2 cp braise
