Ingredients

    1 Cup Flaxseed meal
    1 tsp baking powder
    3/4 cup milk
    4 eggs (or 3 eggs and 1 egg white)
    1 tsp cinnamon
    1 TBSP vanilla extract
    2 TBSP Splenda

Tips

Add more milk to stretch the recipe. Can substitute coconut or almond milk, play with the eggs/white ratio...I have not tried a lower calorie sub for the butter.


Directions

Combine flaxseed and baking powder in a large bowl. Melt butter in a small dish or pot and put in a small bowl. Whisk in eggs/white, then add cinnamon, splenda, milk and vanilla and combine well. Add wet ingredients to dry and combine well. Allow to thicken for 2 minutes. Pour into waffle iron and cook until set and golden. Approx 8 minutes.
