Ingredients

    3/4 lbs Fettuccine
    1 C pasta water
    3 tsp olive oil
    5 cloves garlic minced
    1/2 sund dried tomatoes sliced
    1 (14.5 oz can) petite diced tomatoes drained
    3 Tbs tomato paste
    1 Tbs- 4 Tbs sugar ( 1 first, then add to taste)
    1/2 C plain non-fat greek yogurt
    1/4 C light sour cream
    1 1/2 Cup baby spinach
    salt/pepper to taste
    parmesan cheese to taste

Directions

Make pasta
Mix sour cream and yogurt, set aside
Heat garlic and sun dried tomato over oil
2 minutes
Add diced tomato, tomato paste and sugar
Slowly mix in yogurt mixture and let thicken, add spinach until wilted.
Mine did not thicken, it needed thinning. I used almost the whole cup of pasta water to thin.

Serving Size: makes 4-6 servings
