Introduction

This recipe is VERY easy, really tasty, and a healthy way to hand your sweet tooth and your chocolate craving. Every time I make it, someone asks me for the recipe. This recipe is tweaked from one provided on the SkinnyTaste blog - I recommend checking out all of Gina's recipes. I made enough changes to it that I felt I could / should share it here. Ingredients

    1 spice cake mix (15.25 oz) - mix only
    .85 cup pumpkin puree
    .85 cup water
    3/4 cup chocolate chips (milk or semi-sweet)
    1/4 tsp cinnamon (optional)
    1/4 tsp pumpkin pie spice (optional)

Tips

Feel free to add a little seasoning if you'd like to make it even a little spicier. Sometimes I add 1/4 tsp cinnamon and 1/4 tsp pumpkin pie spice - it just depends on my mood.

You can also go with a different flavor of cake if you want (but keep an eye on the nutritional info).


Directions

Preheat oven according to the cooking instructions provided on the cake box.

Spray a 13x9 pan with cooking spray and then lightly cover the spray with flour to keep the cake from sticking. Set pan aside.

Empty the spice cake mix into a mixing bowl. Add just less than 1 cup of pureed pumpkin (estimated at .85 cup for recipe) and just under 1 cup of water. For each of these, I just use a cup measuring cup and fill it most of the way full. You could also do 3/4 + 1/8 (that would be close as well). Add spices. Mix until smooth.

Fold in 3/4 cup chocolate chips (can be semi-sweet or milk chocolate, but this recipe was calculated with milk chocolate chips since that's what I had on hand.)

Spread batter into prepared 13x9 pan and bake according to the box instructions. Cut into 24 small squares.
