Ingredients

    1 can Libby's pumpkin (or 2 cups cooked pumpkin)
    1 1/3 cup lowfat milk
    1/2 cup brown sugar
    4 eggs
    1 tsp cinnamon
    1 tsp nutmeg
    1 tsp ginger
    pinch of salt

Tips

You could add crushed graham biscuits to the bottom of the rammekin for a crust.

Ingredient Swap:
Milk - Almond/Soy milk
Brown Sugar - Honey or Truvia/Stevia
Feel free to mess with the spices to suit your taste! More or less of everything, but make sure you only taste test before adding the raw eggs!


Directions

Put everything into the blender and blend untill smooth. Pour the mixture into 6 greased rammekins.

Bake for 45 minutes at 190C (375F). Let cool, chill in the fridge (if desired.)
