Introduction

Ingredients

    1 shallot
    1 1/2 t. ginger root
    2 cloves garlic
    1/2 t. coriander, ground
    3/4 t. cumin, ground
    1/8 t. cinnamon, ground
    1 1/2 T. oyster sauce
    3/8 t. turmeric
    1/6 t. white peppercorns, ground
    1 T. packed brown sugar
    1/2 T. lime juice
    1/2 T. tomato ketchup
    2 - 2 1/2 T. coconut milk
    1 Thai chili pepper; or ground cayenne pepper to taste

Tips

When making curry, pan-fry about 1/2 - 1 T. of this for a few minutes before adding other liquid ingredients to curry.


Directions

Combine all ingredients in a food processor or blender and mix until smooth. Refrigerate in an airtight container.

Serving Size: Makes enough for about 12 single-servings
