Ingredients

    15/16 cup 1% milk
    1 Tbsp lemon juice
    25g Almond Meal (approx. 1/4 cup)
    60g dry oatmeal (approx3/4 cup) (ground into oat flour)
    1/2 tsp baking powder
    1 tsp ground cinnamon
    2 tbsp. milled flax seed
    2 scoops of Vanilla Whey Protein Powder (26g protein per scoop)
    1/2 tsp vanilla extract
    1 Tbsp honey
    2 large egg whites
    1/4 cup water (...if want thinner)
    cooking spray

Tips

You can add 1/4 cup water if you would like your pancakes to be thinner.

I have a coffee grinder that I use to ground my oats, flax seed & other spices...never used for coffee.


Directions

Put 1 tbsp of lemon juice in 1 cup glass measuring cup. Add enough milk to measure a total of 1 cup liquid. Stir & let set for 5 minutes. Meanwhile, combine dry ingredients-almond meal, oatmeal, baking soda ,milled flax seed, protein powder & cinnamon. Then add milk mixture, vanilla extract, & honey. Whisk until blended. Let stand for 10 minutes.In another bowl beat egg whites till fluffy & peaks are stiff. Fold egg whites into batter mixture (mix in 1/4 cup water if want thinner pancakes). Heat griddle on med-high heat & spray with cooking spray. Pour out batter to make approx. 4" pancakes. Cook & serve.


Serving Size: makes 8 servings (2 pancakes)
