    2 cups lentils
    8 cups veggie broth (Trader Joe's organic, GF, vegan)
    Trader Joe's mirepoix soup starter (1 container, 14.5 oz)
    1 Tbsp olive oil
    1 bay leaf
    1 Tbsp dried oregano
    1 clove crushed garlic
    1/2 cup canned, low sodium diced tomatoes
    Salt and pepper to taste


Boil lentils for 2-3 min separately.
Heat olive oil in stock pot. Add mirepoix and cook until softened. Drain lentils and add to stock pot. Add bay leaf, oregano, garlic. Cook for 2 min. Add veggie broth, vinegar and diced tomatoes. Let simmer for at least an hour. Season with salt and pepper
