Introduction

This is a great way to have oatmeal "to go". Gluten free and only 2 tablespoons of added sugar plus vitamin A and fiber from the pumpkin. Everyone loves these! Ingredients

    1 cup pumpkin puree
    1/2 cup applesauce
    2 Tablespoons brown sugar
    1 cup milk (any kind - almond, cow, soy, coconut)
    .5 tsp vanilla
    tsp pumpkin pie spice
    pinch salt
    tsp baking powder
    1.5 cups oats (any kind - minute, quick, old fashioned)

    Choice of addins: raisins, craisins, blueberries, walnuts, almonds, chocolate chips, coconut, etc

Tips

-last 5 or so days in a sealed container or plastic bag.
-Great for "on the go" oatmeal
-Tastes awesome microwaved the next day with some yogurt and maple syrup or honey.


Directions

Preheat oven to 350
Mix together all ingredients in a bowl. (Add the add-ins last).
Let sit 3-5 minutes.
Pour into 9 greases muffin tins (about 1/3 cup each).
Bake 30 to 40 minutes or until toothpick comes out clean.
Enjoy!!
