Ingredients

    6 Medium Baking Potates (6 oz each)
    1 Tbsp Butter (Melted)
    1 Tsp Hot Pepper Sauce (or I add Salsa instead)
    Salsa?
    1 Cup Green Onions (thinly sliced)
    1 Lg. Red Pepper (chopped finely)
    1/2 Cup Broccoli florets (fresh, finely chopped)
    1 Cup (4 oz) Shredded Calorie Reduce Cheese

Directions

Scrub and pierce potatoes. Bake 400 deg. for 40-50 min. or until tender. Cool slightly, cut each potato in half, lenghwise. Scoop out centre, leaving thin shell. Place potato shell on ungreased baking sheet.
Combine butter and 1/2 tsp of hot sauce, or Salsa. Broil 4 inches from heat for 5 minutes or until edges are crispby and butter is bubbly. Meanwhile, combine onions, red pepper, broccoli, salsa, and 3/4 c. cheese; spoon into potato skins. Sprinkle with remaining cheese. Broil 2-3 minutes longer or until cheese is melted.

Serving Size: 1/2 Potato (One Half Potato Skin) YIELDS: 12 servings
