Introduction

Made this for dinner last night, and it was pretty tasty. I used turkey pepperoni to shave off some calories.

Ingredients

    2 slices of bread
    2 slices of cheese of your choice (I used reduced fat provolone, original recipe used American + Colby. Depends on your taste)
    8 slices turkey pepperoni
    1 tbsp tomato sauce of your choice

    Nutrition information is variable--it will depend on the type of cheese/bread/sauce you use.

Tips

-Try sprinkling Italian seasoning on top of the bread after cooking
-Cooking the bottom piece of bread while the sandwich is open faced works REALLY well. Planning to try this for all my grilled cheese sandwiches from now on.


Directions

-brush one side of bread with butter, olive oil, etc. (calories not included)
-layer 1 slice of cheese,8 slices of pepperoni, and the other slice of cheese on dry side of bread.
-place bread, buttered side down, on stove top grill or skillet.
-Cover open faced sandwich with a skillet lid (this melts the cheese while the bread browns).
-When the bottom of the bread is browned nicely, top open faced sandwich with the other piece of bread that has been lightly spread with tomato sauce.
-Butter upper side of bread and turn sandwich with a spatula to brown other side.
-At this point the cheese should be almost melted, so very little time is needed except to make the other piece of bread nice and brown.

Serving Size: makes 1 sandwich
