Introduction
You can make this with any sausage, I will try turkey next time. Make the meat coating thin for optimal cooking without drying out the egg while baking. Also, the smaller the egg the better and it would also reduce calories a little. You can make this with any sausage, I will try turkey next time. Ingredients
-
6 Hard boiled eggs
2 Eggs, beaten
1 Cup Panko Seasoned bred crumbs
2 Tbsp flour for dusting
6 Italian Sausage Links (I used Perri Sweet Italian)
Tips
These are a fantastic cold picnic staple. Eat them as is or dip in mustard sauce or maple syrup. Make them a day ahead to pack in your cooler.
Directions
1. Remove links from skins & form each into a thin patty.
2. Place one hard boiled egg in the patty and close your hand around it, molding the sausage around the egg.
3. Dip in beaten egg.
4. Roll in Panko
5. Bake 350F for 35 - 40 mins. It depends on how thick your sausage layer is, make sure it's properly cooked through!
