Introduction

This is not going to be a sweet muffin like you're used to. To me it tasted almost like an unsweetened corn bread muffin, but with a slight peanut butter taste. Ingredients

    1 3/4 c white flour
    1 T baking powder

    2 eggs
    1/2 c milk, I used whole milk
    1 c sugar free pudding, vanilla, prepared
    1/4 c melted butter
    1/2 t vanilla


Tips

I had some left over sugar free vanilla pudding, which added just a tinge of sweet to sugar-free peanut butter muffins.


Directions

Mix flour and baking powder together, make a well in the middle and add other ingredients. Mix until just blended, dough will be slightly lumpy.

Bake at 400 degrees for 20 minutes
