Ingredients

6 boneless and skinless chicken legs
(you can substitute chicken breasts if you prefer)--probably 3 large ones cut in half
2 cans of whole peeled tomatoes
2 large onions peeled and chopped
1 can of tomato paste
1 tsp salt
1 tsp ground pepper
3-4 T of olive oil
sprinkle of Parmesan cheese
Tips
Serve over whole wheat spaghetti with a sprinkle of Parmesan cheese. Add a side salad of your choice and a glass of wine and you're in for a healthy and delicious dinner!
Directions
put half of the olive oil into skillet on med-high and brown the chicken legs
cut up onions while chicken is browning and add to chicken, cook until translucent
add remainder of olive oil to either a pressure cooker or a large skillet
add chicken (cooked), onions (cooked) 2 cans of whole tomatoes and the can of tomato paste
salt and pepper
cook on high until it bubbles then reduce to low and let simmer for 2-3 hours
If using a pressure cooker, turn onto high until the weight jiggles, turn to medium for 30 minutes, then to low until you are ready to eat
Cook the pasta according to the directions on the box--al dente ( a little firm) is best. Don't overcook the pasta!
