Ingredients

    1/2 cup oat flour
    1 cup quick oats
    1/4 tsp salt
    1/2 tsp baking soda
    2 scoops vanilla whey powder
    1 tsp cinnamon (or to taste)
    1/2 cup Splenda
    1 cup applesauce, unsweetened
    4 egg whites
    1/3 cup water
    1/4 cup raisins
    2 medium apples, roughly chopped

Directions

1. Whisk together all dry ingredients.
2. Whisk together all wet ingredients
3. Add wet to dry ingredients and stir until combined.
4. Stir in apple chunks.
5. Spoon mixture into muffin tins greased with olive oil, or other healthy fat/oil of your choice.
6. Top each muffin with the raisins, dispersing evenly.
7. Bake for 25-30 minutes in preheated 350 degree oven.
8. Enjoy!
