Ingredients

    5 cups of chicken broth
    1 (6 oz.) package of Uncle Ben's Long Grain Wild RIce Mix
    2 carrots sliced
    1 (10 oz) can 98% Fat Free Cream of Chicken Soup
    1 1/2 cups of Fat-Free Milk
    1 (8 oz.) Package of Low fat cream cheese
    1/4 tsp salt
    1/2 tsp pepper
    1 (10 oz.) package frozen chopped broccoli

Directions

In a large saucepan, combine the water and rice mix with the contents of the seasoning packet, add carrots and bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add soup, milk, cream cheese, salt and pepper; stir until cheese is melted. Add broccoli and cook over medium-low heat for 5-10 minutes or until broccoli and rice are tender.

    awesome soup, easy to make, I added a pinch of red pepper flakes as hubby likes his food spicy, I left out the salt and I did microwave the frozen broccoli for 3 minutes before adding to the soup :) - 5/21/10
