Introduction
Low Carb, Low Fat, seasoned and flavorful hashbrowns for breakfast or dinner. This recipe is for an entire celery root (540 grams, or about 5.5 cups). Ingredients

1 large celery root (1 cup = 100 grams, I had 540 grams)
1 T. salted butter for frying
2 T. mushroom seasoning
1 tsp. granulated garlic
1 T. dried oregano
Salt & Pepper to taste
Directions
Cut off outer layer or the celery root, so you just see the white "meat". Grate into small hash brown size. Toss in a bowl with mushroom seasoning, garlic, oregano and salt and pepper.
Heat oven to 425 degrees. Melt butter in a large cookie pan with ridges (so the butter doesn't melt off).
Spread seasoned celery root onto the pan and let cook in the oven for 25 or so minutes. Stir a few times for even cooking.
EAT! It's great with eggs and sausage.
Serving Size: Cooks down to about 3 cups of hash
